I don’t know why eggplant sometimes gets hated on. I absolutely love the stuff when it’s prepared nicely. Mark ¬†Bittman called it “eggplant un-parmesan,” but because it’s vegan, doesn’t even call for cheese, and is totally different from eggplant parm, I decided to call it just what it is: roasted eggplant with tomato basil sauce. It is simple, and awesome, and the wonderful roasted flavor of the eggplants and tomato and basil just stand on their own.

Sriracha may be a public nuisance, but it does make for a fantastic noodle soup. I know I probably sound like a broken record here, but I am amazed how good this soup is for how simple it is. It hits all the perfect notes of tangy lime, savory broth, a tiny bit sweet from the sweet potatoes, and then a hint of spicy sriracha in the background. It’s one of those soups I could eat all the time and never get sick of it. It’s a vegan soup without trying to be, and non-vegans like me love it too.

Spring is finally, really here and I wanted to make something pink. Typical, I know. I really love dishes that use the natural color of fruits rather than food coloring, so blood oranges immediately came to mind. Blood orange panna cotta… but I wanted a version of healthy panna cotta, and I found one that is definitely healthier than normal panna cotta. It’s made with yogurt, almond or coconut milk, and honey.

And I’m glad I was wrong, and that I tried it – this soup is so rich and satisfying. You should locate some parmesan rinds and make it before it gets too hot outside…

I love recipes like this. There’s something very satisfying about cooking a whole dinner in one pot. I think for me, that comes from knowing that I won’t be washing 5 different huge pans after dinner, but it’s also nice when the flavors from every ingredient cook together to make a singular dish, and that’s exactly what this one is. A grain (here, farro, but I’ve done it with rice and it was great) bubbles away alongside tomatoes, onion, garlic and olive oil, and the end result is a mild and flavorful mix of them all.
